Grandpa Hicks Classic Swiss Fondue

 

This Serves 4 to 6 People

 

           The Ingredients!

  • 16 ounces Gruyere

  • 8 ounces Emmentaler

  • 4 teaspoons cornstarch

  • 1 clove of garlic cut in half

  • 12 ounces dry white wine 

  • 2 teaspoons lemon juice 

  • 1 1/2 tablespoons kirsch

  • Freshly ground black pepper

  • Pinch of freshly ground nutmeg

  • Crusty bread for dipping cut into bite sized cubes

          The instructions

  • Coarsely grate the cheeses into a large bowl and toss with cornstarch to coat.

  • Rub the garlic halves on the inside of a heavy saucepan, and discard.

  • Add the white wine and lemon juice to the saucepan and bring to a boil.

  • Gradually add one handful of cheese at a time to the wine, stirring the mixture over moderate heat till smooth and fully melted before each additional handful of cheese.

  • Add the kirsch and season with pepper and nutmeg.

  • Stir while simmering for 2-3 more minutes, then transfer to a fondue pot set over a low flame.

  • Serve immediately with cubed bread, stirring the fondue as needed to prevent separation.
